Rabri recipe | Indian sweet recipe

Rabri also known as Indian traditional Sweet dish made with full fat milk, sugar, cardamoms and nuts. It is served as a dessert or along with gulab jamun, jalebi and puri. Rabri tastes very delicious and creamy. Making rabri at home take some efforts and some patience.


Preparation Of Rabri


  1. Take a wide pot. Pour milk andput it to a boil on medium flame.

  2. While the milk heats up, bring 1 to 2 cups of water to boil. Switch off the gas and add some nuts. Leave them in the water for 5-10 minutes.

  3. After that peel the skin. Chop them to desired sizes.

  4. When the milk turns hot, transfer 3 to 4 table spoon hot milk to a small bowl. Add saffron to it and mix it well.

Making Of Rabri

  1. check the milk Every time a layer of cream forms, gently move it towards the sides of the pot.

  2. Stir the milk at the bottom to prevent the fats getting scorched. This 2 step process of sticking the layers of cream to the sides of the pot and then stirring milk at the bottom should continue till the milk reduces to half of it original quantity.

  3. After stirring the milk for about 30 minutes, It reduced to half of it quantity. The timing may vary depending on the intensity of heat.

  4. Add sugar. You can add as more as you want.

  5. Then add saffron mixed milk, cardamom powder for more flavour

  1. Begin to scrape the sides with the help of a spoon. If the cream has dried up, add some hot milk from the pot it self over the cream so it softens and comes off quickly.

  2. Continue to stirring until the milk reduces to 1/3 of the original quantity. you can also see the color of the milk changes to creamy.

  3. Add some nuts over it and turn off the gas.

  4. put rabri for cooling & then garnish with nuts. Serve it with gulab jamun or jalebi.

Important Tips

  1. For making Rabri make sure you have pure fat milk or buffalo milk.

  2. Avoid using iron pots for make Rabri. Use a wide steel pot for it.

  3. To make rabri with layers, then avoid non-stick pot as the layers won’t stick to the sides and bottom.

Timing

  1. prep time- 5 min.

  2. cooking time- 45 min. - 1 hr.

  3. Total time- 1hr. - 1hr. 15 min.

  • 5 tablespoons sugar

  • ½ teaspoon cardamom powder

  • 7-8 strands saffron (kesar)

  • 10 almonds

  • 10 pistachios
